Turkey and Sausage Empanadas
Fácil - Easy seasonal recipe, perfect for a Thanksgiving starter
Ingredients:
- 24 store-bought empanadas discs or 2 package refrigerated pie crust
- 1 ½ pounds ground turkey
- 1 Linguica or Portuguese sausage
- 2 tbsp. olive oil
- 1 medium onion, finely diced
- 2 green onions
- 2 garlic cloves, minced
- ½ cup dried cranberries
- 1 tbsp. parsley
- 1 tsp. cumin
- 1 tsp. red pepper flakes
- 1 tsp. salt
- 1 tsp. pepper
Directions
- Preheat
the oven to 400 degrees and spray a baking sheet with nonstick cooking
spray.
- In a
large heavy skillet, brown the meats and onions over medium-high heat.
Once the meat is browned (about 5 minutes) add the salt, pepper, red
pepper flakes, cumin, cloves, and dried cranberries, and simmer it for
about 10 minutes. Remove it from the heat and let cool.
- Unroll
and cut each of the pie crusts into 6 round discs with a cookie cutter. Put
a small scoop of the meat mixture in the middle. Fold it over and seal the
edges with the tines of a fork to make a pocket. Bake the empanadas for 25
minutes or until golden brown. Allow the empanadas to cool for a few
minutes before serving.
